Tiramisu

Ingredients

  • 6 large egg yolks

  • 2 packs of Italian ladyfingers

  • 3/4 cup white sugar

  • 1 cup cold espresso or strong coffee

  • 1 cup mascarpone cheese (room temperature)

  • 1 1/2 cup heavy whipping cream

  • ½ cup coffee flavored Liqueur optional

  • 1/4 cup unsweetened cocoa for dusting

Directions


Sabayon:

Separate the egg yolks and place them in a heat proof bowl with the white sugar. Place over a simmering pot of water. Be sure not to let the bowl touch the hot water. Whisk the egg mixture constantly until it forms a fluffy light yellow color. continue whisking for roughly 15 minutes. You may also use a hand mixer on a medium setting. Set this mixture aside and allow it to cool.


Whipped Cream:

While it is cooling, pour the heavy cream into a bowl and mix on medium speed until it forms stiff peaks. Set to the side. grab your marscapone cheese and fold it into the sabayon mixture. it should be soft at room temperature and take little effort to get a smooth constancy. Give it a good whisk to get out the last chunks and fold in the whipped cream. Pour in your liquor of choice, mix one last time and you are ready to stack your tiramisu!


Stacking:

Find yourself a square or rectangle pan. dip each lady finger in the coffee and quickly lay it down in your pan. spread a nice layer of the sabayon mixture on top and repeat. finish with a layer of sabayon on top. Dust lightly with the cocoa powder and allow to set in the fridge overnight. In the morning you'll have beautiful tiramisu
